- 3/4 cup honey
- 1/2 cup coconut oil
- 1/2 cup cocoa powder
- 2 cups rolled oats
- 1 cup peanut butter
- 1/2 cup unsweetened flaked coconut
- 1/4 cup ground flaxseed
- 2 teaspoon vanilla
- Combine honey, coconut oil, and cocoa powder in a small pot and melt and stir ingredients together on low heat; remove from heat when all is well blended with no lumps from the coconut oil or cocoa. Stir oats, peanut butter, flaked coconut, flax , and vanilla into the hot honey mixture until the peanut butter melts and the mixture is smooth.
- Drop mixture by spoonful onto waxed paper. Set aside to cool in refrigerator or freezer.
